GINGER JERK CHICKEN

This is a flavorful recipe for spicy chicken with jerk seasoning.

  • 6 Chicken Leg Quarters
  • 8 Tbsp Walkerswood Jerk Seasoning
  • 3 Tbsp White wine vinegar
  • ¼ cup fresh lime juice
  • 1 inch fresh ginger
  • ¼ cup of honey
  • ¼ cup mustard
  • Salt and pepper to taste

Instructions

Make It

  1. Mix all ingredients in a bowl
  2. Lift the skin from the chicken
  3. Rub the salt and pepper under the skin of the chicken
  4. Place the chicken in the marinade
  5. Marinate over night in the refrigerator
  6. When ready to bake, pre heat the oven to 350
  7. Place chicken in pan and cover with foil
  8. Bake for 30 minutes
  9. Remove foil and bake for 45 minutes or until cooked

Jerk chicken is great served with peas and rice, cabbage, and fried plantain.
